How to Cook a Turkey

From El Segundo RS

Brine for 4-24 hours in non-reactive container:

Brine:

1 cup salt

1 cup brown sugar

2 oranges, quartered

2 lemons, quartered

6 sprigs thyme

4 springs rosemary

Preheat oven to 450 F

Place herbs, onion, garlic, lemon, orange, etc…inside turkey.

Rub outside with butter and season with salt and pepper.

Put the turkey on a rack in a large roasting pan, and into the oven. Leave on high heat for approx 25-30 min. Reduce heat to 325 F. Continue cooking until an instant-read thermometer inserted in the meaty part of the thigh registers 170 degrees F. The thigh juices will run clear when pricked with a knife. If the legs or breast brown too quickly during roasting, cover them with foil.

Rest 10-15 minutes.

Be aware: Pan juices maybe to salty for gravy so have some stock on standby.
