Grandma's Granola

7 c. Rolled Oats
1 c. Wheat Germ
1 1/2 c. Coconut
1 tsp. Salt
1 1/2 tsp. vanilla
1/2 c. Brown Sugar
1/2 c. Honey
3/4 c. Oil
1 Tbls. water
1 c. nuts (pecans, almonds, walnuts, OPTIONAL)
1 Tbsp. Cinnamon (OPTIONAL)
1/4 tsp. Nutmeg (OPTIONAL)

Mix ingredients together well. Spread out on two large cookie sheets. Bake @ 225, stirring often until toasted (approx. 2 hours). After it has cooled you can add raisins, craisins, or other dried fruit, apricots, banana chips, etc.
